Temp gauge acting weird.

Past 3 days I'm having rough starts in the
morning. It runs fine the rest of day. Also
for maybe 5 months my temp gauge hasn't
been right. I just figured it was broken. It is
mostly stuck at cold on the temp gauge on
dashboard. Sometimes it'll go up a little or
even to normal. Sometimes going up or
down hills or sharp turns it'll move.
Yesterday I saw it go up to red and I pulled
over checked under the hood no smoke.
I'm just not sure because it's not really
been working so how do I know it's
overheated? I noticed when it's been off
for an hour I start up and fans kick on for a
few. Does the rough starts in morning have
something to do with this temp gauge?

Temperature coolant sensor? Thermostat been changed? Air in cooling system with your needle activity during turns? Any check engine codes?
