Possible Fuel issue 1992 Chevy Blazer TBI 5.7l

Having troubles with my Blazer, runs fine
when at idle, can rev the motor up while in
park, neutral or even in gear but only while
the vehicle is not moving. Once I'm on the
road driving, the truck will not quickly get
up to speed, nor will it allow me to get over
around 45-50 mph, and when I try to
exceed my speed or downshift, the truck
spits and sputters and just won't
accelerate correctly. Just recently replaced
the fuel pump a week ago, from the same
issues, and is now repeating the same
thing over again. I'm aware it could be that
the fuel pump is maybe a defective part,
but could there be some issue causing
these pump to short out? Or some way
that the pump is still getting power at
times, and not getting power at other times
causing it to do this.

Wouldn't be a fuse. Check fuel filter to make sure ur not chasing the wrong issue, it could be ur catalytic converter, spark plugs, wires but i would check fuel pressure first before u decide to replace pump again

Irodri911 plugs and wires and fine, I have no cats, was like that when I bought the truck a few months ago, and it's putting around 40psi fuel pressure wise. Was debating whether it could be a sensor, or maybe coil. It seems to not do it when the temp hasn't reached normal running temperature. So I pulled the coil and threw one I had lying in the shop on it, still same result. Now in the direction that maybe it could be coolant temp sensor? Or possibly something to do with distributor/timing. Still stumped on it.

There's the problem. The truck normally runs in open loop meaning it burns more gas, once it reaches normal running temperature, it switches to closed loop and fuel feed is based on Co2 sensors feedback. If you don't have the catalytic converters, the ECM doesn't know how much fuel to send. 2 options would be to either install the cads back on or remove the temperature sensor so it always runs in open loop but it will burn more fuel.
