I flushed heater core changed thermostat and thermostat housing, bleed the antifreeze and still my 2007 Pontiac Grand Prix gt is still running at in between below halfway and above halfway on gage in

No reason why the gauge shouldn't be accurate, but what temperature is it actually running at? Those little lines and numbers aren't just there for decoration.
