i have a problem with the fan on my 2,0 jetta 5 the fan runs as soon as u turn the engine on

The engine cooled temperature sending unit is weak or bad. It's just a guess but probably the problem.

Is ac or defrost on? Turn them off and see if fans also turn off shortly after. If so then fans are operating properly.

In my 03 golf 2.0 when I turn on the car the fan doesn't turn on but it turns on when I am driving
