Adding transfer case to 2WD 07 ford ranger

Can one swap the transmission tailpiece and add a transfer case to get low
gears on my 07 ford ranger. Are there other differences to the Transmissions
for different size engines other than the bell housing bolt pattern.

It would make a lot more sense to install a lower gear ratio in your rear differential. Running in 4 low even in a 2WD truck would be too low. Your top speed in 4 Low would probably be less than 50 mph.
