I have a 2007 E350 Mercedes part of my steering
wheel is changing colors is there an easy fix?

No easy fix, the sun is baking on it causing it to fade. All you can do is try some Armor-all.

If leather, it could be re dyed, or as suggested, Armor all or any other good protect ant or rejuvenator. Ulimately, replacing it may be the best option....
