would a bad oil pressure sensor stall my car and not start

Not likely, the sensors usually are for the gauge only. You may have a weak oil pump, leaking oil somewhere, oil blowing by rings, worn valve seals etc... Something mechanical may be causing this issue. If it were my car, I would get a scanner that reads oil pressure while car running, and check compression after it cools down.
