Can I take out my rear seats in my Cabrio and put single seats in?

My 2001 VW Cabrio GLX seats are all torn up (they were in this condition when I purchased the car) and I want to replace all of them (including the rear seats) with nicer seating. Preferably racing seats or anything that isn't the factory seating that came in the car. Am I able to do this? Also, am I able to put single seats in the back instead of the bench style that's currently installed?

The picture I posted isn't of my actual seats. Just used one I found to show the style of seats that are currently installed in it.

You can take them out and get them recovered. There’s no room for buckets back there!

Could you show me how to remove the sides panels of a ww cabrio convertable 2000 in order to remove the back seat completly?
