I have a supra and had the same problem. This variable temp problem is likely a head gasket... Do you hear a water/fluid flushing sound as you accelerate??? if so, this may be further evidence of a head gasket problem. Mine was fine for short trips, but on longer trips, the overflow tank would overfill... Head gasket fixed it. Hope this helps.
