Does it stall at highway speed or idle? How long since a tune-up, any applicable trouble codes? Double check your work, make sure you didn't leave any connections loose. Because of head gasket issue, I'd check cylinder compression. If it only stalls at idle, check and clean anything that has to do with idle air system. Just my opinion.
