Why is my temp guage on my 1997 Ford f150 pegging out when I run the ac?

When I run AC my temp guage pegs out if  I turn AC off it returns to normal the engine is
not actually running hot.

I would clean the exterior of the raditor with a good cleaner and I would also flush the entire cooling system and add new antifreeze to the system.

The AC running would have nothing to do with the temp gauge pegging out if the engine is not operating above temp. While changing the antifreeze and cleaning the radiator try a new thermostat. NOTE: Never add just water to a radiator if it is low. Plain water in a radiator will actually make the engine run hotter.
