non-continuous flashing service engine light

For about a month my engine has been running hot when stopped at a light,
but cools down to 210 after moving on.  Now my service light is flashing
intermittently and it starts choking down at a stop, and is running rough while
in park.  I just put gas in yesterday, drove it around a lot, it ran great this
morning for about 4 miles in light traffic, then the light starts flashing.  Goes
off when not accelerating.

Sounds like 2 different issues, heating and rough idle. Catch the check engine light on a scanner, likely it's a misfire, bad to drive it while flashing. You'll probably find a bad coil. Once you find out which cyliinder is missing, swap the coil with another cylinder. Drive around, and try and catch the code again. Bet it will follow cylinders. May need a new coil there. As far as overheating, again, use a scanner to check real temperature, our gauges are not good at all. Could be anything from a bad temp gauge, stat, fan clutch, waterpump.
