05 Grand Prix Temp Sensor Off and Rough Warm Start

05 3.8, 160000 miles. After sitting for an especially
cold 4 day weekend, it started a little rough
(understandable) and then when I stopped for gas it
wouldn’t start again without giving it gas. At this
point I noticed that the temp sensor did the usual
ramp up at starting but then went back to off once
the car was running. After work, it started normal
but I restarted once I got home and it needed the
gas pedal to start again. The radiator fans came on
immediately upon restarting. Outdoor temps range
from -10 to +15 F here.

Upon starting the following morning, very cold start, it started like normal and the radiator fans were not running. This leads me to believe the thermostat is working properly, but the temperature gauge has failed. However, this does not explain the difficulty starting when warmed up.

And now that I’m driving my thermostat is working... for today...we’ll see if it works tomorrow
