Will 17x8 rims fit on my Jeep that has stock
17x7.5 rims?

A 1/2 inch will not make a difference as long as the offset is near stock.

If I wanted a wider look would I be able to use a more negative offset rim from the stock rim to keep from using spacers?

I do not recommend a big offset as it can cause handling problems and wheel bearing damage.
