Car Acceleration Issue

Hi Guys.

I have a 2003 1.2 VW Polo.
Recently had it serviced and it also passed the
test. About 4 days after it now random refuses to
accelerate fully. When taking off the car will go and
speed up as normaly until about 2000 rpm but then
will refuse to go any faster it will still rev and the
rpm needle will go to max if i let it but the car just
wont go any faster and eventually will start to jump
and i have to press the clutch and rev it high to try
get speed into it so it will go on after it gets a bit of
speed but the issue will happen in any gear. I have
brought it to different garages and none of which
know what the issue is or can get  fault code when
they connect the computer.There are no lights
coming on at all on the dash board and its not a
permanent issue i could drive it around and it wont
happen then randomly out of the blue it starts.
Also when the issue occurs then engine doesnt
idle properly it keeps dropping really low then
actually revving itself so it wont cut out plus the
engine is shaking rather than just ticking over like
normal. Can
someone let me know any idea what it might be.
