I can't figure out why 95 Chevy 5.7 wants to die
when I hit a puddle on the passengers side

Is the serpentine belt tensioner on that side? I suspect the belt tensioner is worn and when the belt gets wet, it slides across the accessories. Does the battery light come on, and you loose steering? If that isn't it, are all the splash shields in place, maybe water is getting on some electrical connections.
