Thermostat on dodge charger

I have a 07 dodge charger 3.5,  never over
heated but once after that it ran good. I was
putting water every other day but messed up
cuz i took it to the mechanic, he replace the
thermostat and now my car overheats why?
He wants to rebuild the heads why?

If you were adding coolant and didn't see any external leaks then it is possible that you might have a blown headgasket or a cracked head as the guy said. The new thermostat may have aggravated an existing problem as the engine is now reaching normal temps as it should but the internal leak makes it overheat. Do you know if he ran a block check on the engine while it was there?
