Car runs hot replaced fan and assembly, changed
thermostat. The fan doesn't come on at times like
something is not flipping the switch could it be a sensor?

Fans work constantly with AC on. Turn on the AC and see if they run. If they do, you probably just have a defective engine coolant temperature sensor. If they don't, you have a blown fuse or relay, defective fan clutch or wiring, bad fan temperature switch, or bad fan motors.
