How fast is the sale process. We have a buyer wanting to accept our offer to
buy our vehicle and they are hoping to pick it up a week from today (the are
paying cash through Car Gurus). Is that too soon?

Since the buyer is paying cash I would cut out CG's and do the deal directly, face to face.
