How would I get better fuel economy out of a older
car, specifically a 1980-81 Chevrolet Camaro? What
engines would fit into its build?

Cheapest way it to have it tuned up. Your only going to get 15mpg as that what it was set up to do. If you want MPG, best to buy a little 4cyl beater car.
