My 2013 Outback (35,000km) has very dirty and blackened oil in the front and rear differentials. What would cause this?

Nothing this is normal, if there a really bad smell then you have an issue. Hard driving and towi g would cause the oil to break down faster then normal........

Agree that it is probably normal. Just change the fluid.
