I have a 2004 f350 diesel. Some days it runs just fine and sometimes it dies
while driving down the road, will restart after a minute and then die again and
restart and then not go over 50 mph, and then run fine again.

Hello, after reading you post I have come to tell you that your truck is going into a “soft limp” mode. This can happen due to several reasons. If you have no check engine light then this is where your trouble shooting comes in. It may be due to a sensor for your air intake.
