my temperature gauge going up every time the aircon will switch on or when I on any switch in the car like headlights, stereo etc.

The first thing to check is the cooling fan operation when the A/C is turned on, the fan should kick on when the A/C is turned on, if it does not run then the fan motor maybe bad or there is a circuit failure, now as far as the gauge rising when other switches are turned on sounds like a voltage problem, so it could be a alternator power output is low or even some bad grounds, like to the dash, engine, body and even sensor grounds.
