Chevy Silverado 2000 loses power

I have a Chevy 1500 with the small v8 the 5.3...
year is a2000.... When driving it sometimes behind
to stall out while either accelerating or even while
driving at a consistent speed of any sort. Usually
starts more so if I've been drinking over 50 mph
and stop. It'll do it when accelerating again. It's had
the fuel filter checked.... All sensors have been
checked and everything from fuel pressure to the
catalytic converter have been ruled out. It just
started flooding the engine with gas lately if you try
to give it has when it starts to stall. If you let it sit
for a while and start it back up I'll run ok for a little
longer but it's getting worse. I don't know what it
could be.... Any suggestions? We've also checked
for vaccum leaks. I really don't know what else to
