Why is the oil a caramel color? My father in law
says it's water mixed with the oil but he doesn't
know much about volvos

Does the oil look like mud? If so you probable have water in the oil due to a bad head gasket. Do you also have white smoke from the exhaust when the car is warmed up?

Yes it looks like a tarnish color.. and yes with the white smoke as well..
