I have a 1979 F 150 with a 302 and c-6, when I drop it into gear it wants to die, I recently put a new fuel pump on and replaced filters, my mechanic rebuilt the carb now I'm right where I started

Do a tune up. Spark plugs, air filter, cap and rotor, spark plug wires, timing and make sure the idle speed is set correctly. Check compression while the plugs are out.

It has new plugs, new distributor pick-up, coil, and excellent oil pressure, any other suggestions?
Full_of_Regrets is on the right track. I have a 1976 and never had a carb re-built, just bought a new one.. seemed better that way, and surprisingly less expensive that you might think. Timing, ignition timing that is is critical. Should be 10° BTDC and I don't know if yours is vacuum advance or centrifugal but make sure there is a vacuum supply if so equipped, or the centrifugal springs may be weak or broken if that is the set-up
With a truck that old it also could be a vacuum leak, and if it happens when you place the truck in gear it sounds like the automatic transmission modulator. Trace down the old vacuum line and replace. If there is ATF fluid in the old modulator it needs to be replaced.
