Why would the car jump while driving it? When it starts to
jump I let off the gas and it will stop and going up hills
seems to make it worse

Could be a cylinder misfire or transmission issue. Any lights lit up on the dash?

Yes but for a year now just Service /check engine I just redid my head gasket
