RAV4 Driving Downhill Without Downhill Assist

I bought a used 2016 RAV4 AWD LE, and once I started driving I realized it has
no downhill assist, or engine braking like my old pries had. I have already run
into issues with my brakes heating up and smelling while on long descents.
Does anyone have any suggestions of what to do? Should I shift it into manual
gear 1?

If you have to engage long, steep descents, you need to lower the gear (downshift) to help the brakes or you'll lose them. Not knowing your speed or which gear the car is using, you should lower the gear to where the engine assists with braking; could be one gear or two, but pay attention to engine speed so you don't harm it.
