Could be a bad thermostat, or bad water pump. If there is a lot of white smoke coming out the tail pipe and has a sweet smell to it then a head gasket is blown.

Oh it doesnt smoke or anything like that just the gauge seems to go to red almost after 15mins of driving is head gasket expensive to fix? Sorry I have no idea what to do

What could it be if it sounds like bubbling hot water under the bonnet whenever I turn the car off because it does that too?

Bad thermostat, plugged radiator, bad water pump, bad head gasket.

You need a shop to check it over.
