350 small block chevy running problems

I have a chevy k10 with a 350 small block and it
has an issue where it wont shut off after we start
it. And its not a gentle regular idle speed when it
starts. We put the key in, turn it over, it fires up then
seems like the RPM's quickly climb and the only
way we found to shut it off is to choke it out, and
we're not sure why. Any suggestions?
