How come my car still over heats after replacing the thermostat?

There are lots of other factors. The condition of the radiator is one. If the cooling fans are not working your car will overheat, especially at low speeds. Your engine and cooling system may need to be flushed out. Since you have the Northstar engine you may have head gasket issues.
