my scirocco stalls then won't start again for about 10 mins

You have vapour lock happening. Unfortunately, not an uncommon problem with this generation of Volkswagen cars.

what engine and injection system does it have?? you need to clean the fuel distribuitor if it is a k jetronic and see if the plate is clogged or stuck.
